TIFFANY RAN – Babalio Taiwanese Pop Up
in collaboration with JOHNNY FELLIN – Brothers & Co.
Babalio is a pop-up focused on showcasing Taiwanese flavors. Tiffany Ran is a Taiwanese American chef who has worked in Seattle’s restaurant kitchens for over a decade. She founded Babalio Taiwanese Pop-Up in 2018 after years of feeling homesick and unable to find many of the dishes she missed from home. Chef Johnny Fellin and Tiffany met while working together at Brothers & Co. and the two often talk about the crossovers between Italian and Taiwanese cuisines. This dinner will reflect this interesting and tasty cultural fusion.

winter chicories meets spring greens, taiwanese bottarga, black garlic, pistachios
THIRD COURSE
Grilled Rapini
grilled rapini, herbed bread crumbs, capers, pickled cordia seeds, preserved yolk
FOURTH COURSE
Dumpling-Style Agnolotti
pork and chrysanthemum agnolotti, ginger-pork jus, white pepper parsnip puree, morels, wood ear, and hedgehog mushrooms
FIFTH COURSE
“Papaya Milk”
fresh papaya, zabaglione, peanut-sesame crumble, mint meringue
Specialty cocktails, beer, wine and other beverages will also be available for purchase at the event.
