Chef Sabrina’s lifelong love of cooking and passion for creating flavorful dishes has made her one of Seattle’s most sought after and favorite chefs. While growing up in Fairbanks, Alaska, Sabrina and her mother created many meals together, using fresh herbs and vegetables from their family garden and wild fish and game from Alaska’s bounty.

Sabrina graduated from Michigan State University in 1992 with a BA in Elementary Education and a minor in French. Her interest in the French language brought her to Europe to complete her studies in Tours, France. For the next six years, Sabrina traveled extensively throughout Europe learning languages and savoring the art of European cooking.

After meeting her husband and La Spiga co-founder, Pietro Borghesi, her journey brought her to the Emilia-Romagna region of Italy, where Pietro grew up. During the next five years, Sabrina’s love for the outstanding flavors and the ubiquitous food culture of regional Italy soared, and she knew she wanted to return to the United States to share her passion with others. In 1998, Pietro and Sabrina opened the original La Spiga, on Broadway, on Seattle’s Capitol Hill. After eight successful years, they expanded to their current location in the historic Piston & Ring Building on 12th Ave.

Sabrina’s many fans remark that her dishes are “right out of Italy” and that “she deeply understands the flavor profiles from the Emilia-Romagna region.” This following has earned her 4 to 5 Stars on popular social media sites.

Sabrina’s ultimate goal is to make each guest feel as though they are “coming home” for a meal, accentuating the homemade quality of an experienced Italian cook. She focuses on Italian vintage flavors and recipe authenticity, giving each of her creations the love it deserves. She also contributes her own homegrown herbs, harvested from heirloom seeds brought back from Italy, and enjoys canning preserves and sauces for use in the restaurant, a craft she learned as a child.

Sabrina is published in many local cookbooks, has been interviewed on radio and television, and was even an Iron Chef contender against Bobby Flay!

In her spare time Sabrina enjoys sharing her love of cooking and gardening with her two young children.
