Pasta Making and Wine Tasting Classes It's hard to learn how to make ethereal pasta from a recipe. Let La Spiga chef and co-owner, Sabrina Tinsley, show you the right touch when it comes to handmade pasta. Each month, La Spiga will feature a lesson on a different pasta shape and the proper accompaniments. Pietro Borghesi, Tinsley's husband and La Spiga co-owner, will offer wine pairing tips tailored for each class. Each class is $75, if paid in advance, or $85 at the door. Price excludes tax. Reserve by calling 206.323.8881. Space is limited to 12 students per class. Schedule: Incorporating alternate grains and flours Frappe, Orecchiette, Gnocchi al Saraceno, Tagliatelle Bastarde and Spaghetti di Farro will be discussed. July 18 Pasta for dessert Tortelli Dolci, Torta di Tagliolini and additional pastas will be discussed. August – Sold Out Getting to know your pasta equipment The chitarra, rolling pin, various cutters and their functions, contraptions for filled pastas will be discussed. Students are encouraged to bring in their own unusual equipment to share. September 19 Seasonal pasta: butternut squash and chestnut flour Tortelli di Zucca, Gnocchi di Zucca, Pappardelle di Castagne and Gnocchi all'Ossolana will be discussed. October – date TBD Using residuals: how the Italians utilize waste Maltagliati, Pasta Sporca, Tagliolini and additional pastas will be discussed. November – date TBD Pasta and Truffles: An “in-depth" study of truffles and an “in-mouth" study of truffles with pasta December –date TBD
La Spiga's Kid's Cooking Classes Let La Spiga chef and co-owner, Sabrina Tinsley, take care of the little one for the afternoon. Each class will feature a simple lesson on Italian classics with dinner to follow. Each class is $45. Price excludes tax. Class is for children ages 6 - 14. Ferragosto La Spiga will invoke a Romagnolan street scene during its second annual Ferragosto on Aug. 16. Typically held on Aug. 15, Ferragosto marks the height of summer and Italian communities worldwide gather for copious amounts of food, drink and entertainment. For Roman Catholics, Ferragosto is also the day the Virgin Mary ascended to heaven and is therefore considered a major holiday. In honor of Ferragosto, La Spiga will raise its garage-door façade and bring the street festival indoors by transforming the bar, back patio and mezzanine into stations for Italian street foods, wines and beers.
