We have a small crew that works hard and with pride in order to produce the high quality food that we are known for. Chef Tinsley will personally train and/or refine the cooking skills of each line cook for consistency. We challenge each line cook to cross train on multiple stations for a well-rounded experience and encourage them to train in the art of making homemade pastas. Applicants for the line cook position must be serious about a career in the industry and must have completed a 2-year cooking program with at least 1 year of practical cooking experience or have 3 years line cooking experience.

Note: If you are applying from out of town a Skype interview and a 3-minute video of yourself cooking on the line will be accepted in place of the stage and formal interview.

This 1-week stage is ideal for line cooks who are searching for a good fit for the next step in their career. During the stage, you will have the opportunity to observe la Spiga kitchen operations and cooking style, to hone your knife and line cooking skills and learn traditional Italian cooking technique. You are encouraged to spend as much time as you would like to gain a deep understanding of the position. Upon successful completion of this stage, you will be eligible for hire and your resume will be kept on file for future openings in our kitchen.
Our 6-week internship introduces line cooks to la Spiga kitchen operations and cooking style and offers in depth practice in various skills around the kitchen including knife work, efficient line cooking, pasta making and pastry. Each internship is specifically tailored to the needs of both the intern and la Spiga. We require a minimum of 20 hours/week, but applicants are encouraged to put in as much time as they desire. After successful completion of a 6-week internship, interns will receive a certificate of completion and will be eligible for hire at la Spiga for any open positions. Our internship program satisfies requirements for the culinary school externship of Le Cordon Bleu.
